Grilled Pork with Arugula and Grape Salad
This is my husband’s absolute favorite recipe! The flavors are fantastic and it is easy to make on a weeknight after work. The recipe calls for gorgonzola cheese but my husband prefers feta. I think it would be fantastic with … Continue reading
Ribollita
This is another great winter soup I got in a cooking class. I modify the original by adding fresh kale instead of frozen spinach and more broth and carrots. Remove the pancetta to make this a vegetarian dish. Continue reading
Sweet Potato, Bacon and Apple Hash
This is a good fall side dish. I am not usually a fan of sweet potatoes, but this is the best sweet potato dish I’ve found so far. This recipe does require a fair bit of chopping but is otherwise easy to make. Continue reading
Roasted Cauliflower with Parmesan and Pancetta
I can’t remember where I found this recipe but it is very rich and very delicous. Be very careful with the garlic clove! Continue reading
Baked French Toast
I got this recipe from a friend, and it is the best recipe to use for brunch. You can easily make it the night before, refigerate and then pop in the oven in the morning. It’s easy to double and triple for a lot of people. Continue reading
Green Onion and Pancetta Tart
This is a very filling tart and easy to make a double batch. It is a little time-consuming to chop and brown the pancetta, but the rest of the recipe is a cinch. Leftovers save well in the refigerator. Continue reading
Pea Soup
This is delicious recipe from Barefoot Contessa. I don’t include the mint in my recipe, and I’ve only used frozen peas so far, but I will need to try with fresh peas in the spring. Continue reading
Pasta E Fagioli
I got this recipe in an Italian soups cooking class. I add more pasta to make the soup a bit heartier and I add lots of fresh herbs directly to the soup.
